Sour Cream Cannabis Cake With Apple Walnut Filling

This delicious sour cream cannabis cake is swirled with a caramel apple walnut filling then baked in a classic bundt pan. This is a stunning cake for any special occasion or the perfect sweet treat accompanied with a cup of coffee or tea.

Sour Cream Cannabis Cake With Apple Walnut Filling

Apple Walnut Filling
 3 cups apple, peeled, cored, chopped
 ½ cup brown sugar
 3 tbsp butter
 ¼ tsp nutmeg
 ½ tsp cinnamon
  tsp salt
 ¾ cup walnuts, chopped
Cannabis Cake
 1 ½ cups sugar
 ¼ cup cannabutter, room temperature
 ½ cup regular butter, room temperature
 3 eggs, room temperature
 1 ½ tsp vanilla extract
 3 cups all-purpose flour
 1 ½ tsp baking powder
 5 ½ tsp baking soda
 ¾ tsp salt
 1 ½ cups sour cream
Glaze
 2 cups icing sugar
 2 tbsp water

Apple Walnut Filling

Melt the butter in a medium pot over medium heat, add the brown sugar, spices, salt & apples. Stir constantly & cook until apples are tender, approximately 6 to 8 minutes. Stir in the walnuts. Set aside.

Preheat oven to 325°F/165°C. Grease a bundt pan.

In a bowl fitted for a stand mixer or using a hand mixer beat the sugar, cannabutter, regular butter together. Beat in the eggs one at a time, scrape the sides of the bowl, beat in the vanilla.

In a separate bowl mix the flour, baking powder, baking soda & salt together.

Alternately add the dry ingredients & sour cream cream into the egg mixture, blending after each addition. Scrape the sides of the bowl & blend into the mixture is smooth.

Spread 1/3 of the batter into the bundt pan, spread 1/2 of the apple filling on top of the batter & repeat until the batter & filling have been used. Use a butter knife to slightly swirl the batter & filing together.

Bake for 1 hour, until a toothpick inserted into the center comes out clean. Cool in the bundt pan for 20 minutes, then turnout onto a serving plate & cool completely

Glaze

Place the icing sugar in a small bowl, add the 2 tablespoons of water. Add a few drops of water at a time to ensure a thick glaze. Whisk until there are no lumps. Pour over the top of the cake, use an offset spatula to spread evenly over the top & allow it to roll down the sides. Decorate with desired toppings such as sprinkles, walnuts or cinnamon.

*If the glaze becomes too thin, whisk in more icing sugar*
