Saffron & chorizo are mixed with carrots, peas & rice then fried with cannabutter. An easy & delicious twist on the popular Chinese take-out meal!

Saffron & Chorizo Cannabis Fried Rice

Saffron Rice
 2 pinches saffron thread
 ¼ cup hot water
 1 tbsp olive oil
 1 small onion, minced
 2 cups white basmati rice
 3 ¾ cups chicken stock or water
 1 tsp sea salt
Fried Rice
 4 chorizo sausages
 3 tbsp cannabutter
 2 large carrots, shredded
 2 cups peas, frozen
 4 eggs
 soy sauce, to taste
 seasoning salt, to taste
 black pepper, freshly cracked, to taste

Saffron Rice

Place the saffron threads into a small bowl. Crush a bit with the back of a metal spoon. Add the hot water, set aside.

Place olive oil in a large pot over medium heat, sauté the onions for 10 minutes until they begin to caramelize. Add the rice, stir to coat with the olive oil.

Pour in the chicken stock & saffron water. Stir. Bring to a boil, reduce to low & simmer until rice is cooked about 20 minutes.

Cook the chorizo in a non-stick skillet. Cut each sausage into quarters & dice. Add the diced chorizo back into the skillet to crisp up.

Remove the chorizo from the skillet, add in the cannabutter, shredded carrots & peas.

Make a well in the center, add the eggs & scramble. Once the eggs are cooked, add the cooked saffron rice. Sauté the rice, add the chorizo & season with soy sauce, seasoning salt & black pepper.

Serve hot, garnish with saffron threads.
