Red Curry Cannabis Lentils

Red curry lentils, comfort food with a twist, cannabis! This dish is perfect for entertaining or meal prep.

 4 cups lentils, cooked
 2 tbsp butter or olive oil
 1 white onion, chopped
 12 tbsp red curry paste, depending on spice level
 1 ½ tsp curry powder
 ½ tsp turmeric
 2 garlic cloves, minced
 1 tsp fresh ginger, minced
 14 oz tomato puree
 14 oz coconut milk
 ¼ cup cannabis coconut oil
 sea salt, to taste
 fresh cracked black pepper, to taste

Sauté onions with butter in a large saucepan over medium high heat until golden.

Add all the spices, curry paste, garlic & ginger, stir fry for 1-2 minutes.

Add the tomato purée & coconut cream stir & simmer for 20 mins.

Stir in the infused coconut oil. Add the cooked lentils & stir.

OPTIONAL: Serve over rice and garnish with spinach or cilantro.
