Micro-Dosed Jam Cookies

These micro-dose jam cookies are one of my favourite recipes to make, also known as petit fours sec which translates to "little oven dry". These can be filled with any kind of jam or a variety to have an array of flavours & colours. water-soluble THC or CBD tincture mixed into jam is the method of infusion. They are the perfect micro-dosed treat, I think I shall start calling them, "petite dose sec".

Cookie Dough
 1 cup butter, salted, room temperature
 ¾ cup sugar
 1 egg, room temperature
 1 tsp vanilla extract
 ½ tsp salt
 4 ⅓ cups all-purpose flour
Jam Filling
  cup raspberry or strawberry jam
 water-soluble THC or CBD tincture, desired amount

Cream the butter & sugar in a bowl using an electric mixer or a stand mixer.

Add the egg & vanilla, mix until fluffy.

Mix in the salt & flour. Scrape down the sides & bottom of the bowl to incorporate all of the ingredients. Mix until the dough is smooth. Remove the dough, dust the table lightly with some flour. Roll the dough into a large ball, use hands to flatten & wrap in plastic, refrigerate for at least 2 hours or overnight.

Remove the dough from the fridge. Allow to warm up for 5 to 10 minutes for easier rolling.

Line 2 cookie sheets with parchment paper. Preheat the oven to 350°F/175°C.

Flour the table & use a rolling pin to roll the dough out to 1/4 inch thick. Cut the dough using desired shape & size. Make sure to cut out 2 pieces of dough for each cookie, 1 for the top, 1 for the bottom.

Place all of the tops on to one cookie sheet & all of the bottoms onto another cookie sheet. Using a smaller cutter, cut out the middle of the top cookies.

Bake for 6-10 minutes depending on the size of the cookies or until lightly browned.

Allow the cookies to cool completely. Mix desired amount of water-soluble CBD product into the desired flavour of jam. Pipe a small spot of jam on to the middle of the bottom layer of cookies.

Place icing sugar into a small sifter & sift over the tops of the cookies. Place 1 top onto 1 bottom to finish the cookies. The jam will squish up the cut of middle a bit.

    Hi how do I make the jam for the micro-dose cookies? and how can I make butter from marijuana? Cheers Trina 😁

      Hello Trina,
      I’m sorry I was not more specific about the jam filling in my post. I used a local jam from the farmer’s market and mixed in the tincture. It really depends on what size you make the cookies to determine the strength. Each cookie requires about 1/2 teaspoon of jam filling so just add enough tincture to fit your needs. I edited the original recipe, hope this helps!
