Medicated Mac & Cheese Bacon Omelette made with Cannabutter

Okay, so I did come up with this when I had the munchies if you couldn't tell ... but come on it's a combo made in foodie heaven combined with medicine!

Medicated Mac & Cheese Ingredients
 2 cups elbow macaroni
 2 tbsp cannabutter
 2 tbsp all-purpose flour
 1.50 cups sharp cheddar cheese
 ½ cup milk
 ¾ cup heavy cream
 salt, to taste
 fresh cracked pepper, to taste
Omelette Ingredients
 6 bacon strips, cooked
 6 eggs
 3 tbsp milk
 salt, to taste
 fresh cracked pepper, to taste
 1 tbsp regular butter or cannabutter (depending on desired dose)
Garnish
 chiffonade spinach
 green onions, sliced

Medicated Mac & Cheese Directions

In a large pot, cook macaroni noodles until al dente. Drain & run under cold water to stop any carry over cooking,

In a medium saucepan, melt the cannabutter. Add the flour & cook over low heat until mixture thickens, stirring constantly with the whisk. While whisking, add the milk & cream. Whisk until smooth. If the mixture is too thick add additional milk.

Add the cheese & mix until it's melted & sauce becomes smooth.

Add the macaroni into the medicated cheese sauce, mix well & season with salt & pepper.

Omelette Directions

Crack eggs into a bowl, whisk in milk, salt & pepper. Divide mixture in half as this recipe makes 2 omelettes.

Heat a 6-8"omelette pan or small nonstick pan on high heat. Melt butter, add the egg mixture. Tilt pan to spread the mixture evenly in the pan.

Cook for a few minutes or until the egg mixture is almost cooked through.

Add the bacon strips & the mac & cheese on to 1/2 of the omelette.

Fold the opposite side over top of the filling & cook for an additional 1 or 2 minutes.

Garnish with chiffonade spinach or sliced green onions.
