Cannabis Caramel Vanilla Fudge

Happiness is a big block of cannabis infused fudge. Vanilla fudge is mixed with distillate, filled & swirled with chewy caramel & topped with sweet sweet toffee bits!

Vanilla fudge
 450 g demerara sugar
 100 ml milk
 300 ml heavy cream
 50 g butter
 1 tbsp liquid glucose
 1 tsp vanilla extract or seeds from 1 vanilla bean
 THC distillate, to desired strength
Caramel filling
 25 caramel squares
 2 tbsp heavy cream
 toffee bits

Line an 8x8 inch square tin with greaseproof paper. Use a heavy pan that distributes heat well or the mixture may stick during cooking.

Place all the ingredients, except the vanilla, in a deep saucepan - place a candy thermometer into the the middle of the ingredients, make sure it is not touching the bottom of the pan of the temperature will read hotter. Brush the sides of the pan with a wet brush to dissolve sugar crystals stuck to the sides.

Place saucepan on medium-high heat. Stir gently as the mixture starts to heat up, refrain from stirring once it has started to boil. Bring the fudge to a temperature of 112˚- 114˚C
Take off the heat and leave to stand about 15 minutes until temperature reaches 43˚- 45˚C.
Add in the vanilla.

At this point, you can keep it traditional & stir constantly with a wooden spoon until the mixture starts to thicken & its surface starts to look dull or matte or you can transfer to the bowl of a stand mixer & mix it using the paddle attachment. Stir in the distillate.

Melt caramels in the microwave in 30 second increments until melted, mix in cream.

Pour half the fudge into the prepared pan & 3/4 of the caramel evenly over the vanilla fudge. Pour the second half of the fudge on top & drizzle the 1/4 of caramel on top. Swirl a knife & sprinkle on toffee bits.

Allow it to set overnight, up to a few days. Cut into desired sizes. Store in an airtight container or freezer.
