What made you decide to become a chef?
Food was a focal point for my family growing up, it has always been a creative outlet and a passion for me. While I didn’t originally follow my dream career path after college, I have gotten to a place in life where I am able to pursue and grow my love for good food. Being able to create a community with my culinary events is ultimately what inspires my growth as a chef, and pushes me to overcome the various challenges that arise.
Have you always cooked with cannabis? If no, why did you make the transition?
While I’ve dabbled in both cannabis consumption and cooking for several years, I first had the opportunity to cook with cannabis-infused products about a year ago. This transition happened as I left my corporate job and decided to pursue my dream of being a cannachef. Having always loved food and cannabis, this seemed like the perfect direction for me and allowed me to finally focus on the things I love the most.
What is your signature dish or a favorite recipe you like to make?
I like anything full of comfort and soul (carby and oozing with cheese), so one of my longtime favorites is Mac & Cheese. It is the perfect comfort food: nothing cures a bad day like a warm bowl of cheesy noodles! My favorite cheeses to include are gruyere, fontina, sharp cheddar, and parmesan. What makes my Mac & Cheese special is the hint of herbs you get from my cannabutter. It pairs amazingly with the cheese assortment and really makes the dish pop.
What does the future for A High Society Affair look like?
Our passion is for good food, cannabis, and building a community centered around the things we love. We are in the process of expanding our catering and party planning service, so we can bring the High Society atmosphere to private events with your closest friends. In the future, we would like to expand to a retail location, such as a cafe, where we and our collaborators can express our culinary creativity with infused and non-infused treats.
What is your favorite strain to cook with?
I really like working with Sherbert and Gelato. My priority with edibles is taste, aroma, and a relaxing body high, which makes both of these members of the Cookie family personal favorites. However, I am always down to experiment with other strains, and am open to suggestions!
Where does your inspiration come from?
When I was a child in Ukraine, our family did not have access to a wide range of ingredients. A typical family night consisted of creating our own interpretations of foods that we had only ever seen on television. Now that I have the means to both cook and travel, I gather inspiration from my journeys around the world. These experiences also guide the themes for A High Society Affair dinner parties. While most restaurants are typically constrained to a limited selection, we have the luxury of a rotating menu to showcase our appreciation for other cultures and cuisines with a cannabis twist.
What are some of the essential ingredients that you couldn’t live without?
Besides cannabis, some of my favorite kitchen staples include white truffle butter for a delicious umami flavor in any dish, sugar, and flour as a cornerstone for my baking creations, and fresh mozzarella for extra cheesiness!
What are some of the challenges you have experienced in this industry?
Research and public opinion are ahead of the current federal laws regarding cannabis, which makes it difficult to satisfy demand while remaining within the legal realm. This is also reflected in social media, with platforms like Instagram being quick to red flag cannabis-focused accounts, despite the legal situation in the user’s state.
Do you have any advice or tips for chefs who are looking to transition to the cannabis industry?
Network, network, network! There is an amazing community in the Bay Area who understands that there is room for everyone to succeed in the emerging cannabis market. I recommend checking out meetups like The Fire Market and Cloud Sesh in Oakland, and of course, A High Society Affair dinners!
